Hoki produces a whitefish fillet that has a moist texture and delicate flavour.
Hoki is New Zealand's largest commercial fishery and is caught year round by midwater trawling in depths of 400 to 700 metres throughout the southern and subantarctic regions of New Zealand's 200 mile Exclusive Economic Zone.
The hoki fishery is subject to regular scientific and biological assessment to ensure its long term sustainability.
Sanford has hoki products available in a range of high quality product forms, including sea-frozen aboard one of Sanford's specialist freezer trawlers or freshly frozen at one of Sanford's shore based processing plants.
